Basquelle Cheesecake is our premium signature cake, developed based on the classic San Sebastián cheesecake.
Basque cheesecake was created in San Sebastián in the Basque Country in Northern Spain. This is where the name comes from — Basque simply means "from the Basque Country", and refers to its origin, not that the cake is "burnt". The dark, caramelized top is a result of high heat, which is why it's often internationally referred to as "burnt cheesecake".
The name BASQUELLE was chosen as a modern and elegant interpretation of this origin. It combines "Basque" with a softer, French-inspired expression that gives the cake an identity that is both authentic and exclusive.
The cake is characterized by controlled high-temperature baking that creates deep caramelization through the Maillard effect – a natural reaction between proteins and sugars that produces the complex, rich flavor and the distinctive dark surface.
We work with carefully balanced proportions of cream cheese, cream, and eggs to achieve a stable yet velvety smooth texture. The high baking temperature creates a perfect contrast between the caramelized top and the silky-soft core.
